Poke

Hawaii's answer to carpaccio.
It's spelled 'poke', but pronounced poh-kay.

And it's delicious!

It comes in a multitude of iterations.
My favorite:
Chunks of fresh ahi sashimi
with loads of green onions
doused in soy sauce and sambal.

Served on a bowl of rice = heaven.
